the sugar.<\/li>\n<li aria-level=\"1\">Add the flour and mix with a spoon and then by hand.<\/li>\n<li aria-level=\"1\">Add the water and knead with your hands until you have a smooth aria-level=\"1\">Place the pastry in a tart tin, remove the cling film and trim the edges.<\/li>\n<li aria-level=\"1\">Spread a generous layer of guava jam or pur\u00e9e over the pastry, about halfway up the edges.<\/li>\n<\/ol>\n<h5><em>Squaring<\/em><\/h5>\n<ol>\n<li aria-level=\"1\">Roll out the remaining pastry and cut thin strips about<strong> 1 cm<\/strong> wide.<\/li>\n<li aria-level=\"1\">Arrange the strips on the tart in an initial parallel row.<\/li>\n<li aria-level=\"1\">Trim the excess pastry from the edges.<\/li>\n<li aria-level=\"1\">Beat one egg, then brush over the pastry strips.<\/li>\n<li aria-level=\"1\">Add the second series of strips, crossing the first to form a grid.<\/li>\n<li aria-level=\"1\">Brush the new strips again with the
