
Chefs de Tahiti takes you behind the scenes of Délices du Monde, a small, discreet company.
It has been supplying our Fenua with fine produce from south-west France for twenty years. It mainly supplies local catering professionals as a wholesaler and trader. It represents prestigious French brands such as ROUGIÉ, Les Délices de St Orens, PLANTIN, etc.
Formerly known as “Les Délices Du Périgord”, 11 years ago it became “Délices du Monde”, with a broader focus on imported products, but above all a culinary processing activity in their Paofai laboratory.
For this activity, Délices Du Monde wants to be rigorously Artisanal and Authentic, and transforms essentially the best products that it has selected from its suppliers.
Today, Délices du Monde has developed original local know-how. Their dishes are made using the finest produce from south-west France and Norway (for the salmon).
The aim is to make good “home-made” products prepared in Tahiti, such as :
- Semi-cooked foie gras, available in three varieties: plain, with homemade fig confit and with truffles (PLANTIN)
- Beechwood-smoked salmon gravlax, available in three versions: plain, with dill and with roasted sesame.
- Smoked duck breast
- Brie with truffles

What’s more, for over 3 years now, the team has included a young chef with a Bachelor’s degree from the prestigious FERRANDI Bordeaux School of Culinary Arts.
Today, we have a staff of 3 serving a large number of restaurants and hotels, not forgetting the Polynesians through the company’s reseller-partners.
Their watchwords: flexibility and speed of delivery and rigour in their transformation processes.
The salmon, from Norway, is processed on site and available in several versions, including a dill gravlax served in business class on certain airlines. Foie gras comes in plain, truffled or fig versions, while truffled brie is made locally from Plantin truffle paste and oil. Then there’s the dried and smoked duck breast, also made in their workshop.
Where can you find Délices du Monde products?
Délices du Monde is the result of the work of a man with a passion for cooking and gastronomy. These home-made products are also available to the public and are distributed in around fifteen sales outlets in Tahiti, Raiatea and Bora Bora.
