Chocolate banana cake

ingredients
- 140 g white sugar
- 210 g flour
- 330 g mashed bananas
- 80 g soft butter
- 125 ml milk
- 2 teaspoons Baking Soda
- 4 eggs
- 100 g chocolate
Preparation
- In a large bowl, mix the sugar with the egg yolks until the mixture whitens.
- Add the soft butter, mix well, then stir in the milk.
- Mash the bananas with a fork or by hand, then add them to the mixture.
- Then add the flour and baking soda (baking soda). Mix until you have a smooth, homogenous paste.
- Whisk the egg whites until stiff, then fold them gently into the pastry.
- Add half the chopped chocolate.
- Butter a tin, pour in the batter, then sprinkle the rest of the chocolate over the top.
- Bake at 180°C for around 50 minutes.

The best bananas for this cake are Hamoa bananas, which flavour the cake really well. Take them when they are ripe, even if the bananas are black, you can still use them! For this recipe, we used 6 small ones, but it always depends on their size.
To control the cooking process, prick the cake with the blade of a knife. If it comes out clean, it’s ready! If not, cook for a further 5 minutes.
