Grandma Rose’s guava tart

ingredients

  • 300 g flour
  • 150 g butter
  • 3 tablespoons sugar
  • 55 g water
  • Guava purée (or jam)
  • 1 egg

Preparation


Preparing the dough :
  1. Mix the softened butter with the sugar.
  2. Add the flour and mix with a spoon and then by hand.
  3. Add the water and knead with your hands until you have a smooth dough.
  4. If the dough is too runny, add a little flour.
  5. Wrap the dough in cling film and leave to rest in the fridge for at least 30 minutes.
Assembling the tart :
  1. Place the pastry between two sheets of cling film and roll out with a rolling pin.
  2. Place the pastry in a tart tin, remove the cling film and trim the edges.
  3. Spread a generous layer of guava jam or purée over the pastry, about halfway up the edges.
Squaring
  1. Roll out the remaining pastry and cut thin strips about 1 cm wide.
  2. Arrange the strips on the tart in an initial parallel row.
  3. Trim the excess pastry from the edges.
  4. Beat one egg, then brush over the pastry strips.
  5. Add the second series of strips, crossing the first to form a grid.
  6. Brush the new strips again with the egg.

Cooking :
  1. Preheat the oven to 180°C (thermostat 6).
  2. Place the tart in the oven for around 50 minutes, until the pastry is golden brown.
