Ingredients for 2 persons :
- 300 g eggplants
- 30 g plain salted fish
- 150 g skinless chicken meat
- a little green onion, minced garlic, minced Chinese ginger
- 1 teaspoon chilli garlic sauce,salt,white sugar
- 6 teaspoons light soy sauce, black soy sauce
preparation :
1. Cut eggplant into thin slices. Thinly slice the fish salty. Cut into small cubes chicken.
2. In 1 bowl: mix salt + pepper + light soy sauce + a little cornstarch + a little oil
3. Fry the eggplant slices in a wok with a little oil, drain.
4. Brown the chicken in the wok with a little oil, then drain.
5. Brown the salted fish in the wok with a little oil, then add garlic + ginger + 1 glass of chicken stock + the sautéed chicken + the sliced eggplant + seasoning (bowl) + 1 dash of black soy sauce.
6. Cook for 2 to 3 minutes, then add ó spoonful of cornstarch diluted in a little water.
7. Serve the dish in an earthenware pot called a cassolette.
